Ingredients

  • 1-2 pounds cooked chilled shrimp (peeled, deveined, and tails on)
  • Cocktail sauce store-bought or homemade
  • Lemon wedges for garnish
  • Fresh herbs like parsley or dill for decoration

Instructions

Prepare the Mold:

  • Place the smaller bowl or container in the center of your larger mold to create a hollow area for the cocktail sauce.
  • Secure the smaller container with tape if it floats, or weigh it down with a small object.

Decorate the Mold:

  • Arrange herbs, lemon slices, cranberries, or edible flowers around the mold. These will freeze into the ice for a festive look.

Add Water:

  • Carefully pour water into the mold, filling it to about ¾ full. Use filtered or distilled water for a crystal-clear appearance.
  • Adjust decorations as needed—they may shift when you add water.

Freeze:

  • Place the mold in the freezer for 8-12 hours, or until the ice is completely solid.

Remove the Ice Platter:

  • Run warm water on the outside of the mold for a few seconds to release the ice. Gently remove the smaller bowl in the center as well.

Assemble the Shrimp Cocktail:

  • Place the ice platter on a sturdy serving tray to catch any condensation.
  • Fill the hollow center with cocktail sauce.
  • Arrange shrimp around the platter, and garnish with additional lemon wedges or herbs for an extra festive touch.

Serve and Enjoy:

  • Serve immediately. The ice platter will keep the shrimp cold and fresh for hours while adding an elegant touch to your holiday table.
